BURSTING WITH FLAVOR
Offering an exciting and eclectic menu to satisfy even the most discerning palate, we started our culinary adventure with Crispy Pork Belly, served with rice crackers, lime aioli and homemade kimchee. “There is definitely a global element to the menu but the foundation is approachability. My style is very simple – respect for the ingredients, smart sourcing, proper technique and big flavors,” DaSilva said. We paired this with a crisp Sancerre to compliment the subtle, but bold flavors.
An outstanding meal begins with a flavorful sampling of fresh, local specialties and the Octopus doesn’t disappoint. Perfectly grilled, each tender bite, served with vadouvan carrots, yogurt and cilantro sauce was delicious. Pairing it with a refreshing craft cocktail such as the French, blending Bache AO cognac, Giffard banana, cardamom syrup, lemon and sparkling wine or the Gin Fizz with Tyler’s of London dry gin, Bigallett thyme, lime and Aquafaba, soda was simply amazing.
