Open the Door
DÔA, meaning “The Door” in Japanese, is a casual and approachable Asian Cantina concept in Miami Beach and the latest venture from globally renowned restaurateur Arjun Waney. Executive Chef Carlos Estarita brings this taste to life by incorporating traditional Japanese and Chinese techniques with Latin American ingredients thus creating a complexity of flavors. He says, “Here at DÔA we serve incredible new world cuisine that showcases the unique flavors of Asian influenced cuisine born in Latin America. We call it LatAsian however all our dishes are inspired by Nikkei (Japanese-Latin) and Chifa (Chinese-Latin) recipes.”
These Ribs Are Nuts!
Paying homage to the often used, rarely celebrated Cashew, Chef Carlos Estarita added their delicious crunch to these exquisite Pork Ribs with cashews atop the chifa glaze, scallions and sesame – a combination so good, it’s nuts!
A Light-Hearted Mix
The best way to begin your meal is with this crisp heirloom tomato, hearts of palm and avocado salad topped with the house miso vinaigrette. A perfect partner for this light dish is the DÔA Cooler, made with fresh pressed watermelon juice, Yuzu fruit and Ever Spring tea plus a kick of Ketel One Vodka and Soto Sake.
