In the later hours, Villa Azur will feature international DJs creating an energetic after-dinner ambiance.
For a special treat, the whole grilled Dover Sole is simply sensational. The delicate and delicious fish is complimented with fava beans, cilantro, scallions and tomatoes for an amazing melding of flavors. When pairing wine with a fish as fine as Dover sole you don’t want to mask its light sweet flavor in any way. We chose an excellent Chassagne Montrachet Domaine Ferrari Capuano 2012.

Growing up in the rich culinary atmosphere of Limoges, France, Chef Erwin Mallet states, “As Executive Chef at Villa Azur for almost five years now, my journey has welcomed changes in culinary trends allowing me to challenge myself and adapt my skills to the evolving styles and demands of the culturally diverse guests of Miami.”
IT’S A DATE
We began our culinary journey with the irresistibly savory Roasted Date. Wrapped in savory Bayonne prosciutto on the outside, a decadent dried date is filled with Manchego cheese, served with Manchego cream and drizzled with honey. Simply delicious and our mouths were watering for more. The key to pairing wine with this is to choose a wine that compliments all of the components. Unlike many reds, our soft Rioja Cune Crianza 2012 was superb.
