Cheat Day

This summer, Seaspice’s Chef Jill’s no-bake Lemon Mousse will make your taste buds look forward to cheat day. Indulge in this cool, easy-to-make dessert full of sweet and citrusy notes.

 

Lemon Mousse

3 Gelatin sheets, bloomed

3 Egg whites

3 Egg yolks

3/4 cup Heavy cream

2 Lemons, juice and zest

1/2 cup Sugar

 

To Prepare:

Whip whites to medium peaks, transfer into a bowl. Whip Heavy cream to soft peaks, transfer into another bowl. Mix sugar and lemon zest together. Heat up the lemon juice and melt the bloomed gelatin into it. Whip yolks and lemon sugar until ribbon stage. Slowly add the lemon juice mixture to the yolks and mix into a very loose liquid. Place the bowl in an ice bath, stirring frequently. Chill until fluffy but not stiff. Slowly fold the whites into the yolk mixture, then the whipped cream. Immediately pipe into 3 glasses. Wrap tightly and chill.

 

To Serve:

Garnish each cup with fresh berries and mint leaves.
