Hemp Nut Crusted Edamame Cakes


• 3-3/4 cup Edamame
• 1 oz. Garlic
• 1/2 cup Shallot
• 2 oz. EVOO
• 2 tsp. Mint
• 3 oz. Lemon juice
• 1/2 cup Flour
• 1/2 cup Flax meal
• 1-1/2 cup Water
• 2 cups Hemp nuts
• 1/2 tsp. Pomegranate seeds
• 1/4 cup Tahini
• 1 oz. Lemon juice
• 2-1/2 tbsp. Fennel
• 1 oz. Heart of Palm
• 3/4 oz. Green apple
• 1/4 tsp. Dill
• 2 tsp. Lotus root
• 1/4 tsp. Celery seed
• 1/4 tsp. Black sesame seed
• Pinch of salt
• Pinch of pepper


Edamame cakes: In a pan add edamame beans, garlic, shallot, olive oil, mint, salt, pepper and lemon juice and process until resembles coarse breadcrumbs. Form into 3 cylinder shaped cakes. Dredge in flour, flax meal and hemp nuts. Cover and set aside.

Sauce: Place the tahini, lemon juice, 2 oz. of water, garlic and salt into Vitamix and blend until smooth. Add more water, if necessary.

Salad: Shave fennel and heart of palm on mandolin into lemon water and set aside. Shave lotus root on mandolin into water. Heat olive oil in pan and sauté edamame cakes carefully until golden brown. Meanwhile, in a bowl, mix together heart of palm, fennel (after removing from water and drying slightly on towel), shave green apple, lotus root, celery seed, lemon juice, olive oil and salt. On the plate, spoon tahini sauce and swirl into round shape. Place three edamame cakes on sauce, and arrange salad at center. Garnish with pomegranate and sesame seeds.
