BRUSSELS SPROUTS WITH THAI CHILI GLAZE

Try this delicious Brussels sprouts recipe that’s enhanced by the flavor of Mae Ploy Chili Sauce. It has a mildly spicy, sweet flavor and confetti-like specks of chili flakes that make it visually appealing. All of the flavors of the dressing really balances out the sweet, nutty smoky flavor of the Brussels sprouts that is hard to resist.

BRUSSELS SPROUTS
INGREDIENTS:

• 1 lb. Brussels sprouts
• 1/2 tbsp. young coconut
(shaved)
• 1/2 tbsp. mint
• 1/2 tbsp. Thai basil
• 1/4 tbsp. salt
• 1/2 cup Thai dressing

THAI DRESSING
INGREDIENTS:

• 8 oz. Mae Ploy Thai
Sweet Chili Sauce
• 1 tbsp. pickled ginger
• 1 tbsp. tamarind paste
• 2 tbsp. garlic (minced)
• 1 sprig Thai basil
• 4 tbsp. coconut milk
• (Blend everything in a blender
on high for 1 minute.)

METHOD:
Trim and cut Brussels sprouts in half (and heat a deep, frying pan (with walls at least 3 inches deep to prevent splatter) with oil to 350 degrees. Place the Brussels sprouts into the hot oil and cook for 2 minutes and 30 seconds. Remove the Brussels sprout from oil and let it drain/cool for at least 30 seconds. Place Brussels sprouts into a mixing bowl and toss with Thai dressing, Thai basil, and mint. Then garnish with shaved coconut and serve.
