EASY PUTTANESCA WITH SHRIMP & CHERRY TOMATOES
Puttanesca is usually made with some type of pasta, but in this quick dish, it is omitted. Still, this flavorful, mouthwatering recipe includes white wine, lots of cherry tomatoes, Kalamata olives, anchovies, capers, and of course, succulent shrimp! Puttanesca is a type of pasta deriving from Naples, Italy and actually roughly translates to “prostitute.” The story behind this? The sauce used in this type of dish is said to have been created by prostitutes because it could be cooked quickly between clients’ visits! The recipe serves four and takes only about 25 minutes to make!
THAI YELLOW CURRY WITH BEEF & POTATOES
This recipe takes longer than the rest on this page, but trust me, it is well worth it—especially if you’re a fan of spice! Craft your very own Thai curry paste from scratch using shallots, garlic, galangal, ginger, red Thai chiles, and more, then you’ll drizzle it over the soft Yukon gold potatoes, tender slow-simmered beef, and fluffy Jasmine rice to complete the perfection. This recipe requires about 2 hours and 30 minutes to cook, with 20 minutes prep time, but as stated before, it’s completely worth the time!
CREAMY AVOCADO & SPINACH PASTA
It’s not every day that you see a green pasta dish, but this one is absolutely to-die-for! Just gather together some spaghetti or fettucine, avocado, fresh spinach, pecans, basil, Parmesan cheese, and a couple of other ingredients for this healthy, smooth plate. If you’re like me and love avocado, you’ll be ecstatic at the fact that it’s the main ingredient in this recipe! Avocados supply us with healthy fats, protein, fiber, and potassium. Spinach, another key ingredient, has high nutritional value and plenty of antioxidants. Meaning, not only is this delicious, it’s healthy and thus, guilt-free!
GRILLED ASIAN EGGPLANT WITH GINGER SAUCE
Here’s an unconventional dish to really switch things up from that daily routine! The tender grilled Asian eggplant is drizzled with fresh ginger sauce and garnished with purple basil for a crispy, smoky treat! Dessert is one of my favorite parts of going to a restaurant—I just love to see how the chefs will get creative when it comes to the sugary, the syrupy, and the downright sensational. This Honeyed Yogurt and Blueberry Tart is no exception; it’s absolutely phenomenal! The recipe by Melissa Rubel Jacobson uses creamy yogurt and honey on top of a graham-cracker crust. The crust is flavored with crystallized ginger and then finally embellished with juicy, plump blueberries. If you’re both a fruit lover and dessert lover, this dessert won’t disappoint!
