Carrot Cake French Toast

INGREDIENTS FOR CARROT CAKE FRENCH TOAST:
• 2 slices carrot cake
• 2 eggs
• 1 tsp. vanilla extract
• ½ tsp. ground cinnamon
• ¼ cup milk
• 1/4 cup candied pecans
• 1/2 tsp. powdered sugar
• 2 oz. clarified butter

INGREDIENTS FOR CREAM CHEESE FROSTING:
• 6 oz. cream cheese
• 4 cups powdered sugar
• 1 tsp. vanilla

DIRECTIONS FOR CREAM CHEESE FROSTING: Mix cream cheese in a mixer with vanilla and powdered sugar and scoop into a piping bag and set aside.

DIRECTIONS FOR CARROT CAKE FRENCH TOAST: First, make the Carrot Cake French Toast batter mix by beating the eggs, vanilla, and cinnamon in a shallow dish. Next, dip each carrot cake slice in the batter and drip off the excess. Then, on a buttered griddle place the toast down and cook through about 3 minutes per side with medium heat. Once golden, place the first slice in the center of a round plate and pipe approximately 5 oz. of the cream cheese frosting evenly on top and sprinkle with half of the pecans. Place the next cooked slice on top of the frosting, and pipe 1 oz. of the frosting in the middle of the top of the slice. Sprinkle the remaining pecans over the top. Garnish with powdered sugar over the top. Enjoy!
