Jové, named for the Italian God of the Sky, evokes confidence, elegance and timeless vibrancy and reflects more than just spectacular view of the heavens. Here, it reflects the godliness of the freshest local produce and seafood, and the creativity of dishes that are at the same completely modern. At Jové, they have taken the essence of Italian cuisine and infused it with these qualities. With views that stretch out to their oceanfront pool terrace and the infinite skyline beyond, there’s only one word to describe dining here: incredible. Offering flavors rooted in classic Italian cooking, but with a casual flair that matches the panache and originality of Palm Beach. With a beautiful vibrant décor and a bar stocked with carefully selected wines and spirits, Jové brings a fresh new take on Italian dining to the restaurant scene. Enjoy Italian cuisine infused with a bold sense of creativity and the freshest ingredients. Our culinary journey began with tender Beef Carpaccio drizzled with aged balsamic, parmesan spuma, asparagus, capers and quail eggs, as well as fresh Tuna Tartare, served with fregola, avocado, beet yogurt and saba. The creamy Caprese Salad with burrata mozzarella, brandywine tomatoes, pine nut pesto and aged balsamic melted in our mouths while the grilled Octopus with baby fennel, red pepper sauce, olive, artichoke and fennel gel was amazing.
Gnocchi with figs and Gorgonzola picante was irresistible as was the Spicy Black Tagliatelle with clams, blue bay mussels and garlic. The Seafood Rigatoni is loaded with shrimp, scallop, squid, broccoli and cherry tomatoes while the Saffron Risotto with crab and green peas was luscious. The Mushroon Ravioli with sweetbreads, speck, and salted ricotta in a porcini sage sauce was a party in our mouths while the Garganelli Alla Bolognese with veal, beef and tomatoes was rich and flavorful. Stone Fired Pizza offerings, large enough to share, include the Concorso by Taylor Miles with pear Gorgonzola, bacon and pickled shallots, Ricotta with Neuske bacon, zucchini, oregano oil and espelete or the Quattro Stagioni with tomato, artichokes, mushrooms, olives and ham. The Four Cheese with Gorgonzola, mozzarella, taleggio and Parmesan was rich and delicious as was the Mushroom Pizza with a mixture of wild mushrooms, Parmesan and herbs.
Don’t miss the fresh Line Caught Halibut, served with cannellini beans, spicy salami, vernaccia, clams and prawns or the perfect Branzino with guanciale, mushrooms, micro vegetables, lemon and herb butter as well as the Brodetto Di Pesce, loaded with clams, prawns, scallops, branzino, calamari, crostino in a tomato-fennel broth. Land lovers can enjoy Kurobuta Pork Tenderloin, served with a mushroom glaze, semolina gnocchi and celery root sauce while the Prime Teres Major has a porcini rub, and roasted root vegetables in a Barolo wine sauce. The Veal Milanese with arugula, heirloom tomatoes and shaved Parmesan was simply perfect! Murray’s Farm Chicken, served with green peas, mint, pecorino, artichokes, fennel and garlic jus is tender and juicy. Wonderful side dishes are perfect to share and include broccoli rabe with bruleé grapefruit and garlic, Tuscan kale with pancetta and golden raisins, “Patate al Forno” roasted potatoes and asparagus gratin with Parmesan.
For a sweet ending, along with our cappuccino’s, we thoroughly enjoyed the irresistible Crema Bruciata with vanilla custard and burnt caramel, the creamy Hazelnut Semifreddo with passion fluff, praline passion sauce and strawberry confit along with the decadent chocolate Wave with raspberry star anise mouse, manjari chocolate cremeus, sangria sauce and a Sicilian pistachio sponge and the delightful Berry Crostada with raspberry and “ivory” cremosa, poppy seed lemon crisp, seasonal berries and strawberry sorbet. Each plate is a work of art and simply perfect.
