POLLO ALLA PARMIGIANA (4 Servings)
• 6 6 oz. chicken breasts
• 1 cup flour
• 4 eggs
• 3 cups bread crumbs
• 1/4 cups olive oil
• 2 cup tomato sauce
• 1 lb. mozzarella cheese slices
First, slice chicken breasts in half and pound until thin and coat chicken breast in flour. Dip coated chicken in egg batter. Coat chicken in bread crumbs. Gently pan sear chicken on each side for 2-3 minutes. Ladle tomato sauce over chicken then place slice of fresh mozzarella cheese over chicken and bake at 350 degrees until cheese is melted. Then, ladle tomato sauce onto plate. Finally, serve chicken with cheese on top with any vegetable or starch of your liking and enjoy!
