PAN-SEARED SALMON WITH SEASONAL VEGETABLES (1 SERVING)
• 8 oz. Salmon
• 4 oz. Mix of julienne zucchini, yellow squash, carrot, and fennel
• 1 Tbs. Minced rosemary, thyme, sage, garlic, olive oil mix
• 2 Tbs. Diced tomato, basil, kalamata olives, capers, olive oil mix (caponata)
• Pinch of salt and pepper
Season salmon with rosemary, thyme, sage, garlic, oil mix, salt, and pepper. Sauté mixed vegetables in olive oil until they soften. Meanwhile, pan-sear the salmon on each side for 3 minutes until cooked medium. Serve vegetables on plate with salmon on top. Top dish with caponata. Buon appetito!
