Soy Marinated Chicken Thighs

You’ll want to try this sweet soy recipe for a tender and juicy poultry that is packed with flavor. It’s the perfect summer grilling recipe full of charred goodness!

SOY MARINATED CHICKEN THIGHS WITH RED ONIONS & CRUNCHY GREENS
(2 Servings)

Cook Time: 30 min.

INGREDIENTS:
• 12 oz. Chicken thighs, boneless
• 1 cup Soy marinade
• 3 tbsp. Red onion, thin julienne
• 2 tbsp. Chives, 1-inch thick cut
• ½ tsp. Sesame seeds, toasted
• 8 pcs. Lettuce leaves, washed and soaked in ice water (Bibb, Gem, or Romaine)

SOY MARINADE**
• 1 cup Soy sauce, low sodium
• ¼ cup Honey
• ¼ cup Sake or dry cooking sherry
• ½ pcs. Orange, cut in quarters and squeezed into marinade
• 2 tbsp. Garlic, chopped
• 1 tbsp. Ginger, chopped
• 1 tbsp. Shallots or onions, chopped
• 2 tbsp. Sesame oil

**Combine the chicken thighs and soy marinade and refrigerate for 3-4 hours.

COOKING METHOD: Marinate the chicken for 3-4 hours in soy base. Heat grill or oven broiler on medium to high and cook until an instant read thermometer reads 165°F. Allow meat to cool for 5 minutes, then slice chicken. Lay lettuce in the middle of the plate, and place chicken slices on top of lettuce. Then, garnish the chicken with toasted sesame seeds, chives, and red onions. Enjoy!
